Black Bean & Sweet Potato Tacos w/ Lime Slaw

  • ½ cup dried black beans
  • 1 small sweet potato
  • 3 tsp turkey burger seasoning
  • shredded cheese

For the Slaw

  • ½ cup shredded carrots
  • ½ cup shredded red cabbage
  • 1 jalapeno, sliced thinly
  • lime
  • splash olive oil
  • ¼ tsp ancho chili powder


  1. Cook beans in just enough water to cover them for about an hour with 2 tsp of turkey burger seasoning.

  2. Boil diced chunks of sweet potato until tender. Mash with a fork, adding 1 tsp of turkey burger seasoning.

  3. Combine carrots, cabbage, jalapeno, lime juice, olive oil and ancho chili powder.

  4. Layer 3 tortillas with sweet potatoes, black beans, and cheese. Heat in skillet on low/medium until cheese melts. Top with slaw. Devour.
